Open Question: How to make a white chocolate ganache icing?
Posted on Jun 10, 2009 under Wedding Cake Toppers Q&A | I’m making my own wedding cake and wanted to use white chocolate ganache for the icing. I tried whipping it but it doesn’t set (crust or harden). I also tried just pouring it as a glaze but it’s translucent! Now I’m thinking of trying 2 other ways… letting the ganache sit over night so that it firms up before spreading, or making whipped ganache and then pouring the glaze ganache over top.
Does anyone know if the ganache sits over night before using will it crust of harden once I spread it? If not, do you think using whipped topped with the glaze will work?
